Mushroom Dashi

An extravagant dashi born from meeting the “illusive mushroom.” It all began from the dream of making a plant-based dashi to create something unprecedented. Tamogitake Mushrooms, or golden oyster mushrooms, are known as the “illusive mushroom” due to their limited yield and are also called the ‘dashi mushroom.’

From the rich umami and fragrance of the golden oyster mushrooms that permeate our olfactory senses, and the added delicate umami of shiitake mushrooms and kombu kelp create this full and slightly sweet dashi.
